Chicken Mushroom Noodle Soup
Soup can be a good choice when we want to eat healthily. Drinking soup while having fever is one of the remedy I love to do. There are many soup recipes out there which we can try. Today I want to share a simple recipe of noodle soup, easy to make and healthy. I try to use as much fresh ingredients as possible. For ingredients which I didn't put the measurement, the amount depends on your taste and preference.
For 2 servings, takes around 30 minutes to 40 minutes to prepare.
Ingredients
Noodles of choice, 2 bowls
Chicken with or without bones, 200 to 300 gram
5 cloves of garlic
1/2 onion
Mushrooms of choice, I use shiitake
White pepper powder
Bean sprout
Chinese long cabbage or cabbage or carrot
Chinese celery and spring onion
Cooking oil, about 3 tablespoons.
Water
Salt
Methods
Wash and prepare noodle. Set aside.
Prepare the chicken, wash and cut it to your preferred size.
Slice the mushrooms.
Mince garlic.
Slice the onion thinly.
Cut the cabbage or carrot.
Chop celery and spring onion thinly.
Heat oil in the pot.
Add in garlic. When aromatic add in onion. Saute until golden and aromatic.
Add in chicken and cabbage or carrot. Mix well and add in 2 cups of water.
Cook with low to medium heat until the chicken become tender. Cover the pot with lid bit leave little opening.
If necessary add more water.
Then add in mushrooms and cook for 1 minute.
Add in salt and white pepper powder.
Taste test. Then turn off the heat.
Assemble the noodle soup by adding the noodle, bean sprout, celery, spring onion and the hot soup.
